Hola a todas y a todos nuestros amantes de la repostería, esperamos que hoy se encuentren muy bien; Hoy les enseñaremos a cómo sacar el porcentaje de proteína que contiene tu harina.
¿En qué nos beneficia saber el porcentaje de la harina?
Saber el porcentaje es muy importante a la hora de la elaboración para estar seguros que es la harina indicada para tus panes. También al saber cuanto porcentaje tiene mi harina podremos determinar en qué clasificación se encuentra nuestra harina, recordemos que existen cuatro clasificaciones para nuestra harina, que son las siguientes:
- Floja (0000), que tiene una fuerza (W) de 100 y <9% de proteína (nueve o menos de nueve de porcentaje de proteína).
- Panificable (000), que tiene una fuerza (W) entre 140 - 250 y entre 10% - 11% de proteína (diez u once de porcentaje de proteína).
- Fuerza (00), que tiene una fuerza (W) entre 250 - 300 y 12% de proteína (doce de porcentaje de proteína).
- Gran fuerza (0), que tiene una fuerza (W) de >300% de proteína y >12% de proteína (más de doce de porcentaje de proteína).
¿Qué hace la proteína en la harina?
La proteína en la harina es lo que hace que se desarrolle el gluten y el gluten hace que el pan tenga mucha elasticidad al momento de fermentar este gluten.
Cuando está bien desarrollado y tiene un alto contenido de proteína, es el que permite que al momento de fermentar el pan que comienza a crearse esos gases que permiten que la estructura de la masa soporte y mantenga todos esos gases que se producen. Cuando el contenido de proteína en nuestra harina es muy bajo y hacemos un pan con levadura, comienza a crecer y comienza a quebrarse.
Casi todas las harinas tienen el la tabla nutricional, en los bultos igualmente normalmente ahí encontrarán esta información, en caso que no la encuentres puedes preguntar a tu proveedor o buscar la información que mayormente la puedes encontrar en internet.
Les enseñaremos en donde debemos ver en la tabla nutricional para determinar e identificar cuánta proteína tiene mi harina.
En este caso estaremos utilizan la harina theseus de CMG.
. 
Nos vamos a la parte donde dice proteínas y en este caso me dice ciento veinte gramos, este no es el porcentaje que trae la harina.
Para sacarlo haremos una regla de tres.
Buscaremos el tamaño de la porción que en este caso es de 1 kilogramo, aquí ya tendríamos el tamaño de la muestra.
Trabajaremos únicamente con los números, dejaremos a un lado las unidades de gramos, kilogramos y porcentajes. Recordemos que dentro de un kilogramo hay mil gramos, entonces estaremos representando 1 kg como 1,000 gr y recapitulando tenemos ya los siguientes números:
Proteína 120 gr
Tamaño de la porción 1,000 gr (1 kg)
Esto quiere decir que en esta harina por cada 1,000 gr (o sea 1 kg) tenemos 120 gr de proteína.
Entonces siguiendo con los datos de la regla de tres, los 1,000 gr (1 kg) del tamaño de porción representaría el 100% y queremos determinar cuál es el porcentaje de los 120 gr de proteína.
Para determinar cuál es el porcentaje de esos ciento veinte gramos de proteína, multiplicó los 120 de la proteína por 100 y el resultado que nos arroje lo divido entre 1,000.
Esto nos dará .12 que viene siendo lo mismo que 12%. El porcentaje de nuestra harina theseus sería de 12% y sería una harina de Fuerza (00).
Recuerden que no todas las harinas tienen el mismo tamaño de porción, igual puede venir el tamaño de porción como serving size, que es lo mismo; Igualmente a mayor cantidad de proteína habrá un mayor porcentaje y tendrá mayor elasticidad, nuestro pan tendrá una mayor estructura y fuerza y a su vez se necesitará en nuestra harina una mayor hidratación y mayor agua para que se pueda desarrollar el gluten.
